Sweet something for the soul

Trifle with leftover chocolate cake

Unlike my dear friend Babita who shares this blog with me๐Ÿค—, I have always enjoyed cooking๐Ÿ˜Š . During the ongoing lockdown, one thing that has inspired and motivated me has been to make simple, low fuss meals from the limited ingredients available, but to make them nutritious, delicious and heartwarming. One thing I have tried to do is serve up a simple dessert every few days to keep up the flagging morales and maintain the feel good factor.

Under normal circumstances, we are not very big on sweets and desserts. But at this challenging time, the occasional dessert has played a powerful role in uplifting our spirits and keeping us happy.

Here I’m sharing two simple but gorgeous desserts.

Trifle with left over chocolate cake

For this I layered leftover chocolate cake with some custard made with custard powder, milk and sugar and topped it with whatever fruit was available in the house. I had apples, pomegranate, grapes and kiwi. The dessert was easy to make, satisfying to eat, filled with the goodness of fruits and looked amazing ๐Ÿ˜„๐Ÿ˜„

Coffee Oreo Shots

Coffee Oreo Shots

This was a little bit more wicked!! I crushed six Oreo cookies and mixed it with a little melted butter. I had used normal Amul butter which is salty and the salt added an extra dimension to the finished dish. I pressed the mixture into the bottom of three shot glasses. Then I made a cup of coffee with sugar and milk. I used Vietnamese hazelnut flavoured coffee but it will tastes as good with any kind of coffee. Even sweet black coffee would be good. I then warmed the coffee and dissolved a tablespoon of gelatin into it. I then poured the coffee into the shot glasses, filling them almost upto the top. After a few hours of refrigeration, they were ready to be enjoyed. I served topped with some chocolate chips that I had. Can be served topped with grated chocolate or even without. Tasted delectable ๐Ÿ™‚๐Ÿ™ƒ
